A new head bartender has been appointed at London’s expanding Barrio bars to help the group develop its cocktails with an emphasis on innovation.
Sophie Mackay has taken on the new role after working in other leading London bars such as Adventure Bar, Casita and Lab as well as for The Cocktail Events Company. She is also well-known for creating inventive recipes at cocktail competitions.
Her appointment comes as founder Ferdie Ahmed prepares to open the group’s fourth bar, Barrio Brixton, in early December.
The 200-capacity Acre Lane venue, formerly Veranda and Fiesta bars, joins the refurbished and relaunched Barrio Soho (pictured) – formerly Barrio Central – and Barrio East in Shoreditch and Barrio North in Islington.
Sophie will help to develop the group’s cocktails as part of a strategy “to emphasise the innovativeness” of their cocktails alongside its spirits selection focused on tequila, mezcal, pisco and cachaça and its craft beers. At Brixton, brewery-fresh copper tank beer will be available along with other local and Latin craft brews.
