Bartender wins Greek island trip in mastiha cocktail competition

A bartender will be heading to the Greek island of Chios after winning a competition seeking cocktails using mastiha.

Tommaso Cicala, representing The Looking Glass Cocktail Club in east London, impressed judges with a cocktail that combined Enosis mastiha with Amaro Lucano, Wolfschmidt kümmel and “hot” date and tonka bean bitters.

The nationwide Growers Challenge competition was run by Mastiha World, UK importer of brands Enosis and Kentos, seeking cocktails that captured the Greek resin liqueur’s history and character.

In second place was Joe Polato (pictured below), while third went to Peter Nguyen of Mr Fogg’s Residence in Mayfair.

Tommaso has won a trip to Chios – the traditional home of mastiha – to meet the mastiha growers, experience life on the island, see the trees that produce the mastiha resin, enjoy the local mastiha cuisine and visit the distillery.

The winners in second and third place won a case of Enosis and Kentos mastiha liqueurs respectively.

5ml Wolfschmidt Kümmel
3 dashes Hot Date & Tonka Beans ReinaLab Bitters
Stir ingredients and serve in a digestif glass like a small goblet or a tulip glass.
