Bartender wins trip to the Philippines with Don Papa rum

London bartender Davide Boncimino will be heading to the Philippines after winning a national cocktail competition with Don Papa rum.

He was awarded the title of Don of Cocktails for triumphing in the #itsaDONdeal final against nine other bartenders. They had won places in the final through five regional heats around the UK.

The bartenders (pictured above) were challenged to create an original serve inspired by either the design of the brand’s bottle or the spices, fruits and bitters of the Philippines.

Davide, from Mr Fogg’s in Mayfair in London, won with Fix in the Mind which combined the rum with coconut milk, homemade monkey nuts syrup, Asian drink Morning Rice and banana liqueur (pictured below).

The judges included Don Papa global ambassador Matthias Cadéac d’Arbaud and drinks and travel writer Dan Miles. They were presented with evocative tales of the revolutionary Papa Isio, who was the inspiration behind Don Papa, as well as insights into how wood is shaped in the landscape of the Philippines and the abundance of intoxicating flavours and aromas.

Davide will go to the Philippines for a Cocktail Roadshow with Don Papa, involving guest appearances at key local hotspots such as Finder’s Keepers, Rocket Room and the Fairmont.

Michael Trinity from London’s Chicago Rib Shack and Elite Elixir Events came a close second, followed by Tim Pryde from The Voodoo Rooms in Edinburgh in third place.
