Beach-inspired bar planned for Floridita

A new beach-inspired “summer hideaway” is to be created within rum destination Floridita in London’s West End.

Opening in the basement of the Soho venue on June 25, it will offer a new menu of cocktails celebrating the versatility of rum and the flavours of Latin America.

The new bar space will be called the Rum Island and is modelled on the elegant beach clubs in Miami, Ibiza and the Hamptons in New York.

It will be dressed in swathes of luxurious fabric for a pavilion feel while the walls will be clad with vintage wooden shutters, which can be closed for privacy.

For those wishing to relax, a decadent daybed area is being created with rattan beds, and flickering hurricane lanterns have been placed throughout the Rum Island to add to the ambience.

Cocktails will include the Watermelon Punch, made with Brugal Rum, watermelon, Aperol, cranberry juice, lemon juice and sugar, served in a hollowed watermelon.

The Navy Sangria will be a nautical tribute with a Brazilian twist, combining Pusser’s Navy Rum, Mandarine Napoleon liqueur, sugar and fresh fruits.

For fans of cooling slushies, the quirky Nuclear Slush Colada is a tropical blend of ice, Wray & Nephew Overproof Rum, Koko Kanu coconut rum, pineapple juice and cream.

Executive chef Sascha Rieb has devised a barbecue-inspired food menu using a wide selection of vibrant Latin-American flavours. Starters include chargrilled pork belly with lime mojo, sweet Guindilla chillies and barbecued chorizo sausages.

Main dishes will include a selection of smoky barbecued burgers while a choice of refreshing desserts includes fruit-infused sorbets with exotic flavours such as mango and blood orange to choose from.

The bar will run until late September, operating from 5.30pm to 3am.
