Joe Schofield from The Savoy in London is to represent the UK in Beefeater’s global bartender championship after winning the UK competition.
Joe, who works at The American Bar and The Beaufort Bar at the hotel, impressed judges at this week’s UK final of Beefeater MIXLDN with his skills and his cocktail, Mother’s Milk.
Tying in with the competition’s theme of the evolution of London, his drink was inspired by City of London address 24 Milk Street which was damaged in the Great Fire of London and was later home to Victorian chef Mrs Isabella Beeton.
Served in a small milk glass, it uses burnt milk made by mixing milk with charred barley and vanilla plus smoke, mixed with Beefeater Gin, lemon juice, sugar syrup and egg white.
As winner, Joe will represent the UK in the global finals from January 26 to 29 next year. He will experience a three-day immersion in London’s cocktail history, where he will undertake a series of challenges that test his bartending skills.
Joe said: “I feel so grateful to have won the 2015 UK Beefeater MIXLDN competition as it was a very challenging final with some amazing drinks from the other contenders.
“I am very excited about being part of the global final – I know competition will be stiff but it will be a great opportunity to learn from the industry’s best.
“I am also really looking forward to seeing some of my friends who are representing their respective countries and I am immensely proud to be representing the UK.”
The Beefeater MIXLDN 2015 Global Bartender Champion will be mentored by experts as part of the Beefeater Global Brand Ambassador Programme. After in-depth one-to-one training at the Beefeater Distillery in Kennington in London, the global champion will represent Beefeater at exclusive events in their geographic region and travel to some of the world’s most prestigious bartender events such as Moscow Bar Show and Berlin Bar Convent.

Mother’s Milk by Joe Schofield
50ml Beefeater Gin
30ml Burnt milk (milk, charred barley, vanilla, smoke)
25ml Lemon juice
12.5ml Sugar syrup
25ml Egg white
Make the burnt milk by heating roasted barley with milk until simmering. Strain through an aeropress. Add a touch of vanilla extract. Dry shake and wet shake all the ingredients. Strain into a small milk glass. Garnish with grated burnt marshmallow ash and the aroma from a burnt match.
