Ryan Chetiyawardana and Chet Sharma launch a week-long menu at Lyaness exploring ingredient sourcing, and the evolving dialogue between food and drink.
Lyaness, the flagship bar from the world’s most decorated bartender Ryan Chetiyawardana, aka Mr Lyan, is set to host Chet Sharma’s progressive Indian restaurant BiBi for a week-long partnership from Monday 9th March that celebrates the origin of spice, ingredient sourcing and the intersection of quality food and drinks.
The partnership stems from a decade-long friendship between Ryan and Chet, and a fanatical approach to ingredients and collaboration that is shared by both the bar and restaurant. More than a menu takeover, the bespoke offering represents their unified philosophy that food and drink should be considered as one cohesive experience, with flavours and ingredients working interchangeably to create a seamless dialogue across the table.
Available from Monday 9th to Friday 13th March, from 5pm to 9pm, the menu showcases Chet’s modern Indian dishes, blending heritage and contemporary techniques to create complex yet comforting plates such as Oysters with Pear Jal Jeera, Lamb Neck Nihari with Kulcha, and Cherry Blossom & Chocolate Mousse. The Lyaness team will channel the bold flavours of BiBi’s kitchen through three creative pours using Cassia leaf, BiBi’s spice mixes and Fermented Green Peppercorn & Lakadong Tumeric, all served with the bar’s signature hospitality.
To celebrate the launch, Ryan and Chet will host a panel discussion on Monday 9th March at 5pm, exploring the provenance of spice and how flavour shaped Indian cuisine prior to the arrival of chilli, with the aim of demystifying ingredient use across both drinks and dishes.
This partnership marks Lyaness’s first fine-dining menu takeover, a pivotal moment that reinforces the focus on cross-sector collaboration that sits at the bar’s core. Beyond the week, one of the drinks made from BiBi’s sourced ingredients will remain on the Lyaness menu, while BiBi will continue to serve a Lyaness-inspired cocktail at the restaurant, underscoring an ongoing commitment to shared creativity, exploration and heritage.
On the partnership, Chet commented: “I am delighted to be working with my dear friend Ryan on this project, exchanging flavours and developing amazing cocktails from our ingredients. I have long admired Ryan and his team’s approach to building complex and exciting flavour profiles, and I look forward to having a slice of his expertise enriching our cocktail menu over the coming months. We’re honoured by the opportunity to bring a bit of BiBi to his guests in return.”
Ryan added; “Chet has been a friend and inspiration for over a decade now, and I was so excited to see BiBi finally come to fruition – it’s no surprise that it became one of my favourite restaurants in the world, and a shining light on where to see flavour and hospitality excellence. So you can imagine how excited we were to continue our partnerships at Lyaness which have centered on collaborating with pioneers and thought leaders to work with BiBi to bring to life a really exciting event for our guests. Centering on some of the amazing ingredients the team source, we’ll be creating a marriage of food and drink that will be distinct to what you’d usually find in either venue.”
