London’s Bimber Distillery has introduced a UK-distilled single blended rum to its London Classics range.
The London Classic Rum is made by hand at Bimber’s West London distillery where high-quality molasses are fermented according to master distiller Darius Plazewski’s own specification using a special yeast strain.
Darius describes the spirit, which is a blend of column and pot-distilled rum, as “crystal clear in colour with fresh grassy top notes and a hint of cracked black pepper”.
He added: “I’ve created a clean and smooth taste with a slight sweetness of dark muscovado sugar. The finish is delicate and round with a hint of caramel and pinch of dark chocolate.
“It’s been a true labour of love. I definitely think I’ve created something special – something that embodies the London spirit. This truly is a rum for the people.”
Local ingredients have been sourced to create Bimber’s latest craft release, which is said to boast a “London DNA” and is distilled, bottled and labelled by hand in batches of 1,00 bottles.
The London Classic Rum will officially launch at global rum ambassador Ian Burrell’s RumFest, which takes place on 20 and 21 October.
Ian said: “I am very excited that the UK craft rum scene is growing, and it’s great to see a London distillery making rum. I expect great things from Bimber in the future.”
At the show, Bimber will also launch their signature serve: Bimber London Daiquiri, which will be showcased by acclaimed mixologist and Laki Kane owner Georgi Radev.
