Cocktail bar planned for second Sushinho


London restaurant and bar Sushinho, which specialises in Brazilian-Japanese food, is to open its second outpost in the City in February.

After the success of its Chelsea site (pictured) which opened in 2008, it is coming to the Devonshire Square complex near Liverpool Street station.

It features a sleek destination cocktail bar, The Cutler Bar, in the lower ground floor, which promises an extensive list of classic, contemporary and unique cocktails – all of which will include authentic Japanese and Brazilian ingredients.

Bar food will include the likes of shichimi baby squid and moqueca ceviche alongside a range of expertly prepared sushi and sashimi.

The stylish interiors are being designed by hospitality specialist Macaulay Sinclair. They will include exposed brick, encaustic tiles, and a combination of oak, walnut and stone flooring, evoking the eateries of Sao Paulo and Rio.

In the kitchen, executive chef Joni Viscardi has been joined by Gemma Tully, previously with Gordon Ramsay. They insist it is not about “fusion” cooking as the food blends “Japanese finesse with Brazilian flair” to create a range of contemporary dishes from each cuisine without calling for a choice between the two.

With the emphasis on sharing, signature dishes include the hot Sushinho Roll with Cream Cheese, Salmon and Crab, Butterfish Tataki with Truffle Jelly and Crispy Capers, and Confit Pork Salad with Mango, Melon and Burnt Orange Dressing.
