Cocktails on the menu at expanding Thai restaurant group

Expansion is bringing the flavoursome Thai food and cocktails of Rosa’s Thai Café restaurants to new locations.

The group has launched its sixth site, in Theberton Street, just off Upper Street in Islington, north London, weeks after opening its fifth in Fulham Road, Chelsea.

With plans to have 10 sites by 2017, the company has developed a high-quality cocktail list to complement the seasonally changing menu of Thai dishes.

Cocktails, priced from £7.50, consist of exotic fruit and spiced blends such as the Thai Rum Coffee Cocktail, inspired by an Espresso Martini and made with Sam Song Rum, a shot of espresso coffee, Kahlúa and vanilla syrup.

Also on the menu is the Ginger & Pomelo Leaf Martini, made with gin infused with pomelo leaf, shaken with fresh ginger, lychee juice, egg white and lemon bitters.

The Chilli Cherry Collins (pictured) uses a gin infused with kaffir lime leaf plus chilli-infused gomme, which are shaken with elderflower, lemon, cherry and apple and served long over ice.

Rosa’s Thai Café was created by husband and wife team Alex and Saiphin Moore, who gained three new private investors to support expansion this summer through the UK Angel Investment Network.
