Larger bar planned for second Chop House in Edinburgh

Scottish operator The Compass Group is set to open a second Chop House Bar and Butchery in Edinburgh in August, with a larger bar area than its first site in Leith.

It has taken over a new space in The Arches in the New Waverley development in East Market Street in Old Town with a casual dining experience focused on steak and cocktails.

It will be bigger than the first Chop House which opened in Leith in September and will be laid out over two floors with an extensive bar area. It is due to open on August 11.

The bar will be aimed not just at diners but also at people just looking to enjoy its selection of craft beers and seasonal cocktails, devised by The Compass Group’s head mixologist Michael Lynch using premium spirits.

The line-up will include the Chop House Summer Ale, created at Drygate brewery in Glasgow in collaboration with members of the bar team. There will be other draught beers, mainly from Scottish producers, alongside an extensive wine list and bar snacks.

The focus of the food menu will be British beef, butchered in-house and then dry-aged for up to 90 days in an on-site specialist fridge before being cooked over an open-flame charcoal grill. Sharing steaks such as chateaubriand, bone-in rib and porterhouse will take centre stage.

The interiors have been created by design agency Four by Two, including a custom-made steel staircase leading to a mezzanine level and hanging booth seating, also custom-made from steel, aimed at bringing a luxurious modern feel while highlighting the architectural details of the original brickwork.

The new Chop House is being built in one of the New Waverley development’s 19 listed brickwork arches, originally built in 1875. The £150m development will also include three new hotels and a public square.

The Compass Group’s managing director Mark Fraser said: “Soon after the successful launch of our first Chop House in Leith, we began searching for a second location. We were excited by the heritage and architecture of the Arches development and feel its location is ideal for our second Chop House.”

The Compass Group also operates Edinburgh venues Monteiths, Sygn and The WestRoom.
