Dirty Martini bars add vinegar twist to cocktails

Bartenders at London’s Dirty Martini bars have picked up on one of the latest trends by introducing cocktails containing vinegar.

The new menu features drinks made with “shrubs” – a vinegar-based syrup that is infused with fruits and spices to mitigate the sourness while retaining a distinctive taste. They add an acidic component to the cocktails that helps balance and flavour the drink.

The Blueberry Shrub Martini (pictured) is a sharp combination of Beefeater Gin, Briottet Crème de Mûre and Briottet Crème de Violette with fresh lemon juice, blueberries and apple cider vinegar, garnished with blueberries.

The Montauband Punch, created in memory of smugglers in the olden days, is a punch comprising Courvoisier VS cognac, blackberry and raspberry shrub, lime juice, apple juice and Angostura Bitters.

Dirty Martini bars are in Covent Garden, Mayfair and Bishopsgate in the City.
