Philippine rum Don Papa has launched Sevillana Cask Finish, a limited edition expression inspired by the oranges of Seville, Spain.
Produced in small batches on the island of Negros in the Philippines, Sevillana Cask Finish is created from a blend of rums aged between four and 12 years, distilled from 100% Negros sugarcane and aged in American oak ex-bourbon barrels.
The maturation is followed by three years in two different types of Spanish casks: oloroso sherry casks and Andalusian Vino De Naranja (orange wine) casks.
Non-chill-filtered and bottled at 40% ABV, Sevillana Cask is “bursting with fragrant orange and Don Papa’s signature vanilla notes, with boosts of orange rind flavours, nutty aromas and subtle dried fruits.” The liquid is said to have a “smooth long, tangy finish”.
The rum is inspired by the eighteenth-century Manila-Acapulco Galleon trade, which linked Spain to the Philippines via Mexico, bringing a bounty of products, including the Seville orange, culture and influences.
