Drake & Morgan, which runs seven large-scale bars and restaurants in London, has named Dylan Murray (pictured) from Soho House Group as its new operations director.

Dylan, who is UK director of operations for the international members’ club group, will join the company in January, replacing Jason Thorndycraft who has left to head operations at nightclub business Luminar.

At Soho House Group, Dylan is responsible for the day-to-day running of 17 sites with an expected combined turnover of £90million in 2014. As well as being instrumental in the company’s expansion, he has a team of 17 general managers as well as fronting the support operations division.

At Drake & Morgan, Dylan will play a key role in the continued growth of the company which has two new sites planned for the first quarter of 2015. He will be responsible for day-to-day operations, as well as enhancing service and delivering the planned roll-out for the company.

Managing director Jillian MacLean said: “I’m extremely delighted to welcome Dylan into the fold: his experience, expertise and passion for hospitality will be a great asset as we deliver the next stage of growth for the business.”

Before joining Soho House Group UK, Dylan was managing director of his own business, with two gastropubs and a restaurant that was runner-up for best local restaurant in Time Out London’s Eating and Drinking Awards.

Other previous roles have included general manager at the five-star One Aldwych Hotel in London and restaurant manager at the Landmark hotel in London where he began his career as a chef de rang.
