Bartender Zara Jones from Clouds & Soil in Edinburgh has a chance to create her own bespoke gin after winning a competition run for Pickering’s Gin.
Bartenders from across Edinburgh were challenged to create original drinks that showcased how Pickering’s Gin had inspired them. It was the first competition for the brand which was launched in March last year with the opening of the distillery at Summerhall in Edinburgh.
The final featured bartenders from The Bon Vivant, Spit/Fire, Juniper, The Voodoo Rooms, The Lioness of Leith and Whiski Rooms
They were judged by Matt Gammell and Marcus Pickering, co-founders of Pickering’s Gin, along with writer Geraldine Coates of Gintime.com and bartender Martin Duffy, founder of consultancy Solid Liquids.
Paul Donegan, Scottish brand ambassador for Pickering’s Gin, said: “There were no restrictions placed on ingredients so contestants had the freedom to let their imaginations run wild. The standard was exceptionally high but there was one clear winner on the night.
“Zara created a spectacular drink which married superb flavour and a clever deconstruction of tastes.”
Zara (pictured below) created a cocktail called Beta Test which mixed 50ml of the gin with 25ml of a black pepper and mango syrup plus 25ml of lemon juice and 20ml of egg white.
She said: “I’m an engineering student so love the science behind mixology. I worked on this recipe for that reason. The chemical composition of mango and black pepper enhance the flavour of juniper in the gin. It’s due to alfa pinene and beta pinene present in all three ingredients. Hence the name.”
Paul added: “It’s a truly exciting time in the gin world and the popularity of the product continues to increase and we are thrilled to be part of producing traditional high-quality Scottish dry gin that has an amazing taste.
“Zara will be invited along to Summerhall Distillery, home to Pickering’s Gin, to create her very own gin. From start to finish she will be part of the process before being finally presented with a case of six bottles of her very own gin.”
