Edinburgh hotel set to unveil new-look cocktail bar

A stylish new bar is set to be unveiled at Edinburgh’s G&V Royal Mile Hotel in October as part of a major refurbishment.

Previously called simply Bar G&V, the ground-floor space is being transformed into the “chic and vibrant” Epicurean, specialising in cocktails alongside an all-day dining menu. Pictured below are computer-generated images of how it will look.

Promising “aromatic infusions”, the cocktail menu will take guests on “a Scotsman’s journey of botanical Europe”, using flowers and herbs that have been grown in the hotel’s EvoGro hydroponic. Bar manager Matt Wakeford, who joined four years ago, remains at the helm.

The bar will also offer a large selection of Scottish spirits and malts as well as Mediterranean spirits plus craft beers and wines from select small-producer vineyards. The all-day snacks menu will also have Mediterranean flavours.

The Quorvus Collection’s The G&V Royal Mile Hotel, which originally opened in 2009 as Hotel Missoni, has been undergoing a complete refurbishment, including its 136 rooms.

Alongside the new bar, October will see the unveiling of a new-look lobby and reception. Cakes and pastries made fresh daily, inspired by the EvoGro, will be available throughout the day.

Edinburgh florist Snapdragon will be making its new home in the lobby. Daily fresh flowers will be available to buy, and visitors will be able to book florist masterclasses – complemented by Epicurean cocktails.
