ETM Group has announced three new sites scheduled to open in London over the next six months including a bar specialising in craft beer and cocktails.

Burdock is due to be launched in September at the new Royal London House hotel in Finsbury Square, featuring four overhanging tank beers with rotating guest craft ales.

Covering 2,300 square feet, it will seat up to 100 covers for breakfast, lunch and dinner, bar food and cocktails. The interiors are being designed by Tonik.

The other new openings will be Aviary, a 6,000 sq ft rooftop restaurant and bar on the 10th floor of the same hotel. Due to launch in the autumn, it will have interiors by leading hospitality specialist Russell Sage Studio. It is pictured above as a computer-generated image.

Aviary will be open seven days a week for breakfast, lunch and dinner, with a 2,000 sq ft south-facing terrace with views of the City’s skyline. Two of the hotel’s ninth-floor suites, each with its own terrace, will also be available for ETM Group’s use for private events spaces for 30 to 40 guests.

The third opening will be Greenwood, a pub restaurant that is due to open towards the end of the year in Nova, the new office and residential development and food quarter in Victoria.

Covering 11,000 square feet, it will be spread over two floors, serving up breakfast through to pre- and post-theatre dining and drinks. It is again being designed by Russell Sage Studio.

As well as a large central bar and plenty of seating, the spacious ground floor will also include a brow and lashes bar and barbershop as well as an 80-cover outdoor seating area. It is pictured below as a computer-generated image.

Upstairs will be a bar with five screens, two of which will be mega screens, showing all competitive domestic and international sport throughout the day and night, plus an American 8 Ball pool table and ping pong table.

With the opening of Greenwood, ETM Group will have expanded to 18 sites since it was founded by brothers Tom and Ed Martin in 2000.

Tom said: “We are delighted to be bringing our pubs, bars and restaurants to two more central London locations and at such interesting developments.

“Our first rooftop venture is very exciting and being selected to be part of all that is happening at Nova, Victoria is a privilege. We can’t wait to get these sites open and welcome many of our regular customers alongside plenty of new faces.”

ETM Group’s other sites include The Botanist bar and restaurant in Chelsea and Broadgate Circle, bar and restaurant One Canada Square, Chiswell Street Dining Rooms and pubs such as The Well and The Hat & Tun.

In July, the group sold one of its oldest sites, The Gun in Coldharbour in Docklands to Fuller’s after a strategic review of the business that also encompasses investment in the three new ventures.
