French patisserie specialist brings petits fours to foodservice

Brioche Pasquier Petit Fours

Brioche Pasquier, one of the world’s largest producers of fine French patisserie, has created a range of the most popular classic French petits fours for UK foodservice.

It has introduced a box of 53 hand-finished frozen petits fours, drawing on some of the most popular varieties it has made over the past 10 years.

They include chocolate treats such as Chocolate Tartelettes and Coffee & Chocolate Eclairs as well as fruit-based sweets including an Apricot Flan, an Apple & Blackcurrant Square, a Raspberry Financier and Lemon Tartelettes. A Pistachio Rectangle and Opera Square make up the selection of patisserie.

Each of the indulgent petits fours – or “micro desserts”, as they are now sometimes referred to – is made following a traditional recipe and classic French method to create a culinary work of art.

The individual petits fours are hand-finished in France by Brioche Pasquier patissiers and are free from preservatives and artificial flavours

Based on popular traditional French desserts, they can form part of a dessert menu or be served with coffee or cocktails or offered as an indulgent snack, maybe as part of afternoon tea.

To ensure the petits fours are kept as fresh as possible, the products are frozen as soon as they have been made. They defrost within an hour at room temperature or in two hours if left in a refrigerator. They have a shelf-life of 18 months from frozen.
