Galvin to open first ‘Pub de Luxe’ specialising in craft beer

Michelin-starred Galvin Restaurants is to launch a “Pub de Luxe” in east London, offering craft beers and fresh unpasteurised Pilsner Urquell tank beer.

Under the name of Hop, it is due to open in January on the site of the company’s Galvin Café à Vin in Spitalfields Market, serving classic pub dishes and premium hot dogs alongside the drinks.

It will be the first site for the newly formed Galvin Pub Co, with a second, Green Man, due to open in Chelmsford in Essex in summer 2016.

The new Spitalfields venue will have four large copper tanks containing unpasteurised Pilsner Urquell, three of which will be positioned above the bar. Pilsner Urquell will be delivering fresh unpasteurised tank beer from the brewery in the Czech Republic weekly. Each tank will be opened in turn, providing the freshest pint.

Hop will also offer several bottled and canned craft beers as well as a boutique selection of wines on tap installed, supplied and maintained by OW Loeb & Co.

The space will have new flooring and tiled walls, with classic pub design motifs in a modern space, as well as a front terrace for outside seating. The kitchen will be semi-open, creating an element of theatre. Hop will also be the new development kitchen for all Galvin sites.

The food at Hop will use seasonal ingredients cooked with a mixture of classic and modern techniques. Designed by brothers Chris and Jeff Galvin, it will include meat and fish from their award-winning suppliers with dishes such as slow-cooked beef cheeks in stout and caramelised carrots, Galvin-cured smoked salmon with soda bread, charred beetroot and goats curd salad, rarebread sausage rolls, grilled Suffolk pork and cider braised onions, flatbread with tuna and smoked aubergine, spatchcocked Cotswold chicken and green clementine trifle.

Hop will also introduce the Luxe Dog, a range of gourmet hot dogs available to eat in or take away with Maille’s premium, seasonal mustard served fresh from the pump. Breakfast items, including egg and bacon rolls, toasted muffins and Eccles cakes will also be available to go.
