Gong, the cocktail bar at Shangri-La Hotel at The Shard, London has revealed new baijiu cocktail menu to celebrate the brand’s Asian heritage.

Baijiu is a Chinese spirit made from grain. In China, it fuels social occasions and is typically consumed as a shot.

Inspired by the history of Chinese culture, each of Gong bar’s four new cocktails feature Hong Kong Baijiu, which is 100% organic and made using ancient Chinese techniques, coupled with a range of international spirits.

The Baijiu cocktail, which combines Hong Kong Baijiu, Roku, Antica Formula, green Chartreuse and Campari, is a modern interpretation of a classic, featuring intense citrussy flavours, which give way to earthy and herbaceous notes.

Making up the menu is Marco Polo, an ode to a classic Amaretto Sour, blending Hong Kong Baijiu, Absolut Elyx, Amaretto, lemon, egg white and Peychaud’s Bitters; Hong Kong Saudade, a punchy twist on the Caipirinha combining Hong Kong Baijiu, Cachaça Abelha, peach, agave, bitters and togarashi; and Princess of China, a floral sparkling cocktail made with Hong Kong Baijiu, Cocchi Americano Rosa, rose, raspberry, kumquat and Veuve Clicquot.
