Hilton invests in refurbishment of London hotel bar

The bar at the Hilton London Tower Bridge hotel is undergoing a £500,000 refurbishment for relaunch as TwoRuba Bar in September.

The former Ruba Bar will have Regency-inspired décor coupled with contemporary metal drapery materials, aiming to create the exclusive feel of a members’ club and reflect the local area. It is being designed by Afroditi Krassa, a specialist in top-end bar and restaurant design.

The drinks menu also draws inspiration from the area, which is known for producing gin, with a list of cocktails made with Bermondsey Dry Gin and other independent dry gins alongside a broader list of champagne cocktails and spirits.

TwoRuba Bar will offer an all-day dining menu heavily influenced by produce at nearby Borough Market, with a focus on sharing platters and smaller grazing dishes, called Elements, which can be enjoyed as a light bite or tapas-style.

Using locally sourced ingredients, dishes will include pulled pork sliders with chilli apple slaw, wings of fire with fennel salsa and piri piri dip, chorizo focaccia with aioli, and flash-fried king prawns with garlic yuzu emulsion.

The bar will include the Snug, an intimate area that is lavish and traditional with a relaxed gentlemen’s club feel, suitable for groups of up to 20 people.

Elsewhere in the bar, seating will be relaxed and non-uniform, comprising a selection of eclectic sofas, high-backed and sculpted scoop chairs and modular island seating.

The rich chocolate browns and greys, vibrant copper and warm caramel hues aim to create an opulent feel complemented by an array of pendant lighting and oversized bulbs that drop down from the ceiling in dramatic form, combining to make a chic urban design statement.

The 245-room hotel in Tooley Street is midway between Tower Bridge and London Bridge at the northern end of the bar and restaurant destination of Bermondsey Street and close to The Shard.
