Robb Collins’s Island Spice at Brighton’s Waterhouse Bar

Robb Collins, manager at Waterhouse Bar & Terrace at the Hilton Brighton Metropole, makes his cocktail, Island Spice, for Brighton Mix Off 2012, which will take place at the Brighton SeaLife Centre on September 14. The competition, which has the theme of “La Mer”, is presented by Mixology Group and Kraken black Spiced Rum in association with Latest TV, Jim Beam Devil’s Cut and Tuaca.

The Island Spice is a refreshing aromatic summertime cocktail, carefully balanced with fresh pear and citrus, along with strong vanilla, cinnamon, ginger and clove notes, complementing the predominant spice notes of Kraken Black Spiced Rum. Inspiration was drawn from the Caribbean’s involvement as a hub during the Spice Trade and the predominant use of cloves, ginger and cinnamon in Carribean cuisine.
