Latin American restaurant group Las Iguanas is set to open bars as part of two new sites in Edinburgh and Derby.

A new restaurant and bar will open on the corner of George Street and Charlotte Square in Edinburgh at the end of September. It will be spread over the ground floor and basement of a building that was previously a transatlantic travel agent.

With interior design by Martin Brudnizki Design Studio, it will have a “cool” cocktail bar serving an extensive range of drinks, including cocktails, with Caipirinhas made from Las Iguanas’ own cachaça. On the ground floor, diners will be able to watch chefs at work in Las Iguanas’ signature open kitchen.

Las Iguanas will open on Friar Gate in Derby in mid-October, again with an open kitchen in a stunning double-height atrium with tumbling foliage as well as a cosy bar and patio.

With interior design by B3 Designers, it will have a light and airy main restaurant space in soothing shades of coral, sage and mustard with vintage Latin wall art and artisan tiling.

Other features will include an 18th-century-style bakery, offering a more private dining area tucked away in the back of the main dining room complete with original clay oven.

Las Iguanas’ signature cocktails include the Pear Drop Caipirinha as well as seasonal specials such as the autumnal Smoking Plums made with Bruxo mezcal, calvados, greengage preserve and lemon, plus rhubarb bitters.

These two additions will bring the group’s total number of UK restaurants to 37 including a site in Wembley, north-west London, which opened earlier this year (pictured).
