Leading bartender Tony Conigliaro has bottled a premium aged Negroni as a ready-made cocktail for sale through retail.
Available in 70cl bottles with a recommended price of £36.95, the Classico Negroni was created at his laboratory, Drink Factory, in Shoreditch, London. It is based on the classic Negroni recipe served at Bar Termini in Soho which Tony co-founded.
It is made with a traditional blend of London dry gin, Italian vermouth and Italian bitters but cooked sous-vide at a very low temperature for several hours. The gentle heat stimulates the breakdown of aromatic compounds in the liquid and speeds up the ageing process, creating a drink that is almost identical to a bottle-aged cocktail.
The end result is a smooth classic Negroni, with integrated flavour and depth, balanced between bitter and sweet, with hints of citrus fruits and botanicals.
It comes in a stylish bottle embellished by a hand-drawn label designed by Tony’s long-term friend, renowned London tattoo artist Mo Coppoletta, who founded Bar Termini with Tony and Marco Arrigo.
The Classico Negroni was first served from the bottle at Bar Termini and developed as a retail product due to demand from regulars who wanted to enjoy the drink at home.
Tony recommends his Classico Negroni should be served straight from the freezer in a chilled glass with no ice. It has ABV of 18.9%.
