Leading frozen puree brand adds ambient purees for cocktails

A new range of ambient purees has been added by Les Vergers Boiron, promoted for both cocktails and food.

Using high-quality fruit, the collection comprises 10 top-selling flavours: blackberry, raspberry, apricot, peach, pineapple, pear, passion fruit, mango, blood orange, and strawberry.

Les Vergers Boiron, a specialist in frozen fruit purees for professional kitchens and bars, has launched the ambient range with recommended recipes for sweet and savoury dishes and cocktails from innovative British chef and restaurateur Adam Handling and his head of bars, Tim Laferla.

The purees contain no preservatives, no added flavourings and no artificial colours and are highly stable with a shelf life of 12 months before opening, and eight days in the fridge once opened.

The packaging, with six layers to protect the puree from oxygen and light, is designed for easy product identification and has a large pouring cap to eliminate the need for transferring the puree to a squeeze bottle before use.

Tim, who heads new bar Eve beneath Adam Handling’s London restaurant Frog, has been working with Les Vergers Boiron on a line-up of alcoholic and non-alcoholic cocktail ideas using the ambient purees including Peach & Thyme Cosmopolitan and Strawberry & Elderflower Aperol Spritz. Peach & Thyme Cosmopolitan by Tim Laferla
40ml Vodka
15ml Shiraz
25ml Les Vergers Boiron Peach Puree
10ml Lemon juice
10ml Sugar syrup
Small thyme leaves as required
Shake and fine strain all ingredients into a martini glass without ice. Garnish with extra thyme leaves.

Strawberry & Elderflower Aperol Spritz by Tim Laferla
15ml Les Vergers Boiron Strawberry Puree
40ml Aperol
15ml Elderflower cordial
10ml Lemon juice
Prosecco as required
Build over ice in wine glass. Top up with prosecco and stir. Garnish with edible flowers.
