Citadelle Old Tom Gin

Maison Ferrand has released a limited-edition expression for its Citadelle gin based on the traditional Old Tom style.

No Mistake Old Tom Gin has been given a sweeter taste profile through the addition of Caribbean brown sugar, which is lightly caramelised in copper pots and blended with Citadelle Reserve gin and aged in barrels.

The result, bottled at 44% ABV, is an elegantly floral, juniper-led gin with subtle notes of almond alongside liquorice, plus a spicy hint of cinnamon.

The new expression takes inspiration from the sweeter Old Tom gins that were popular in Britain in the 18th and early 19th centuries.

It is part of Maison Ferrand’s ongoing Extreme programme that sees the creation of a handful of new spirits each year. They aim to push the boundaries of production through new techniques or refine long-lost methods, often the result of many hours delving into historical records.

A cocktail using No Mistake Old Tom Gin has been created at Merchant House bar in London by Kieran Rocks, balancing out bitter orange with honeyed lemon notes and providing a deep, velvety texture through egg white.

60ml Citadelle No Mistake Old Tom Gin
1 dash Orange bitters
1 Egg white
2.5ml Apricot brandy
12.5ml House-made vanilla and hazlenut orgeat
2 sprays Lime extract essence
1 splash Sparkling pine water
Garnish with edible flower, micro herbs and black pepper tincture.
