New bitters range captures fresh flavours for cocktails

Bitter Bastards

A new range of cocktail bitters has been launched, made through rapid maceration to capture fresh flavours and finished in a high-tech centrifuge.

Bitter Bastards is made up of 25 single-botanical bitters, from Black Pepper and White Truffle to Sweet Orange and Naga Chilli, aimed at bartenders and consumers.

They have been created by the team at Master of Malt and have been launched through UK drinks distributor Maverick Drinks. They come in 5cl bottles with various alcoholic strengths.

Instead of soaking ingredients in spirit for several weeks, these bitters are made by rapidly macerating the botanicals in a top-quality base spirit for only a few minutes to get extra fresh, intense flavours by instantly opening up the botanicals’ surface area. This avoids over-stewed notes and overbearing tannins.

They are then clarified using a centrifuge machine which applies a force equivalent to roughly 5,000g to the liquid, making it clear while retaining the essential oils. This is in contrast to the traditional method of clarification by using either filters or fining agents.

Other bitters in the range include Chipotle, Wormwood, Juniper, Cardamom, Ginger, Sour Cherry, Frankincense, Angelica, Cocoa, Coriander, Cumin, Curacao, Gentian, Fennel, Lavender, Clove, Cinnamon, Coffee and Liquorice.
