New guide advises licensees on serving the best roast

A leading pub food expert at Unilever Food Solutions has created a guide packed with hints and tips to help bars and pubs serve a stand-out roast.

Chris Barber’s new guide draws on research into consumer preferences over roast dinners and includes insights into what consumers think makes the perfect roast, how they like their gravy and what veg they expect to see. It also includes hints on how to boost profitability and simple marketing tips.

It is part of Unilever Food Solutions’ campaign leading up to British Roast Dinner Week which runs from September 28 to October 4. It includes a competition to find the best roast dinner, entered at www.unileverfoodsolutions.co.uk.

Chris said: “Roast dinners have great profit potential for pubs. Building a reputation for a great roast can get customers in the door and make your pub stand out from the competition.

“Our ‘How to guide’ gives pubs simple, cost-effective tips on how they can serve a stand-out roast, from making veg the hero of the plate to simple tricks for making gravy special.”

The guide explains how operators can get involved in British Roast Dinner Week and revisits current title holder, the Truscott Arms in Maida Vale in London, to find out how winning the competition has benefited the pub.

Andrew Fishwick, owner of the Truscott Arms, said: “We received so much press coverage in national newspapers that it really put our pub on the map as a destination. People come from all over London and beyond to eat here now. It’s not just somewhere for locals.”
