London bar Quaglino’s is unveiling a new three-part cocktail menu, featuring serves based on the wishes, whims and aspirations of consumers.
Devised by Quaglino’s bar team, led by bar manager Marco Sangion and head mixologist Federico Pasian, ‘Wishes’ is separated into three sections: Wish, Season and Wine My Way.
The first section of the menu, Wish, which is available all-year-round, is inspired by the dreams and fantasies of humankind, from the passionate to the political, and from transient to temperate.
One example is [I wish for] No Borders, which combines ingredients from different corners of the world, including scotch whisky, Brazilian banana liquor, sherry from southern Spain, Italian bittersweet Montenegro liquor and peanut butter from the USA.
Another serve is [I wish for] Spring. Inspired by the blooming of Japanese cherry blossom, it mixes Mancino Sakura, a white vermouth infused with cherry blossom, with Hendrick’s gin, Cherry-Lychee Kombucha and pickled ginger.
The next section of the menu focuses on seasonality and how each season is recollected and defined through the senses, notably the palate. The first instalment, celebrating autumn, will be Fallen Leaves, created with Casamigos Reposado Tequila, black truffle, chrysanthemum and Mangosteen Kombucha.
To create the final section of the new menu, the Quaglino’s mixology team spent the past year experimenting with various wine fermentations, which they are now bringing to the bar through Wine My Way.
Current concoctions include a banana-saffron wine and a barrel-aged pineapple mead to name but a few. These fermentations will be available for a limited time only as each batch and recipe will change once the barrel is empty.
Marco said: “Last year we aimed to promote sustainability awareness among those who follow us. This year we are keeping the energy and enthusiasm around sustainability evolving through a creative and magical new cocktail menu.”
The new menu will celebrate its official launch on 2 October at Quaglino’s 90th Birthday celebration, where the team will host an array of pop-ups from iconic bars from around the world.
Throughout the evening, Atlas from Singapore, Hope and Sesame from China, COA from Hong Kong and Mixology Salon from Japa will take over Quaglino’s bar celebrating the new cocktails and serving some of their own classic drinks.
