A new restaurant and terrace bar perched on the 10th floor of the new Montcalm Royal London House Hotel in Finsbury Square is due to open this week.
Nestled between the city and Shoreditch, the 6,000 square feet rooftop dining destination has been designed by Russell Sage Studio and features an impressive central bar which elegantly divides the stylish restaurant area from the opulent bar lounge.
The eclectic interiors bring the outdoors in with hanging planters alongside gold drinks cases, plush single seating and relaxed banquettes creating a bright, vibrant vibe. Meanwhile, comfortable lounge seating on the heated terrace provides spectacular views of some of London’s most iconic buildings.
Head chef Dan Loftin, previously of Kensington Place, will be serving only the highest quality British meat sourced from small livestock farmers using the best of the UK’s heritage breeds, for example, White Park cattle from Dorset and Longhorn cows from the Lake District.
All fish will be responsibly sourced from south coast day boats and British fishing ports, wherever possible. The prime meat cuts and fish served on-the-bone will be cooked over live charcoal at temperatures of up to 550°C in Aviary’s cast iron Bertha coal oven to ensure the best possible flavour.
The cocktail menu embraces a botanic theme using natural ingredients such as Manuka honey in a fresh and innovative way. Presented in stylish copper tankards and extra special copper pineapple sharing serves, the unique creations will feature alongside a comprehensive wine and beer list.
Aviary is ETM’s second venue to open in the Montcalm Royal London House Hotel, with café, bar and restaurant, Burdock on the ground floor, which opened last month. Burdock offers an approachable, casual menu of small plates and sharing dishes, using the best of British seasonal produce.
