Salcombe Distilling Co has released Wolf Rock, its first ever limited edition cask aged rum.
Wolf Rock (42.4% ABV) is named after an iconic nautical landmark at the entrance to Salcombe’s estuary and marks the beginning and end of the nineteenth-century voyages of the Salcombe Fruiters.
Famous for carrying fresh fruits and spices around the globe, these sailing vessels often ventured to the West Indies to acquire sugar, molasses and rum.
The spirit is fermented and distilled in a traditional 60-litre hand beaten copper pot still using molasses, unrefined sugar and a blend of specially selected yeasts.
Wolf Rock has no sugar added after distillation, nor is it darkened by the addition of extra colouring, which results in a rum with light golden colour and natural sweetness, offering notes of butterscotch, vanilla, oak, chocolate and hints of banana.
According to Salcombe, Wolf Rock is best served on the rocks or in a Salcombe Stormy cocktail (recipe below).

50ml Salcombe Rum Wolf Rock
Fill a Highball glass with ice. Add Wolf Rock and a squeeze of lime and top up with ginger ale. Add two dashes of Angostura bitters and garnish with a twist of lime peel.
