Scottish gin adds Christmas tree botanical for winter release

Dunnet Bay Distillery, the UK’s most northerly mainland distillery, has launched its latest seasonal release, Winter Edition Rock Rose Gin.

Providing a festive flavour profile, it is made with the “hero” botanical of spruce tips, with elements of Rock Rose’s original recipe scaled down to allow the earthy and slightly citrusy notes from the spruce tips to shine through.

It is described as “one of the only gins in the world to be made from Christmas trees”. The brand’s signature ceramic bottle has also been given a festive look.

Rock Rose Gin, made with botanicals foraged from cliffs and forests around the distillery in Caithness on the north coast of Scotland, was launched nearly three years ago.

Previous seasonal releases included Autumn Edition where the citrus elements of the recipe were lowered to make the berries and spice more prominent.

Martin Murray, co-founder of Dunnet Bay Distillers, said: “Our aim is to create spirits that express a true flavour of the Scottish Highlands and the seasonal editions are a brilliant example of this.

“With local spruce tips the hero botanical, we believe we have crafted a truly unique spirit with our Winter Edition and as well as serving with tonic, we also recommend serving it neat in a hot glass.”

The launch comes at the end of year that saw gin sales increase by over 50% year on year for Dunnet Bay Distillery, with demand for premium gin showing no sign of abating both at home and in export markets.
