Italian vermouth Cocchi has developed the second edition of Cocchi Savoy Vermouth di Torino Dry in partnership with iconic London hotel The Savoy.
Maxime Schulte, head bartender of The Savoy’s The American Bar, and Elon Soddu, head bartender of The Beaufort Bar, have joined forces to create the “ultimate” vermouth for the Savoy Martini.
The liquid follows on from the original Savoy Dry, which was created in 2014 by Erik Lorincz, The Savoy’s head bartender at the time.
The 2019 edition sees an increased amount of base wine and more bergamot infusions, citrus and Alpine herbs, leading to a “dryer and more floral taste profile”.
Declan McGurk, head of bars at The Savoy, said: “Cocchi were the obvious partners as they have an excellent background as winemakers, which is a core part to any vermouth.”
Roberto Bava, owner of Cocchi, added: “The goal was not only a great vermouth but one that would make the best possible Martini.
“We are delighted to hear that The Savoy suggested the Cocchi Savoy Dry be sipped as an elegant vermouth but also as a “superaromatic” white wine to accompany food such as oysters.”
