Tell us about Solaya…
Located in art’otel London Hoxton on the 25th floor, Solaya is a rooftop restaurant and bar concept centred around the modern Mediterranean sharing concept, set within vibrant design. The experience is built to feel social and energetic, combining elevated food and drinks with a relaxed, but refined, service style.
The views of the London skyline from Solaya are incredible — how much did that shape the concept from the start?
The views were a huge influence from the very beginning. Being positioned above the city naturally led us to create a concept that feels open, lively and celebratory. The skyline is part of the overall guest experience, shaping everything from the atmosphere to the pacing of service.

Running a rooftop venue in London isn’t straightforward. What have been the biggest challenges – or surprises – that come with the location?
The main challenge is, of course, the unpredictability of the weather, which directly impacts planning and guest flow. However, it has also pushed us to be more agile as a team, adapting quickly to maintain consistency in service. Another key factor is managing high guest expectations that naturally come with the rooftop setting.
How did the original idea for Solaya come together, and how do you keep that consistent day to day?
The concept was built around creating a destination that blends great food, strong drinks and an engaging atmosphere. Consistency comes down to clear standards, daily briefings, and strong leadership on the floor. We focus heavily on training communication to ensure the experience remains aligned with the original vision.
How would you describe the food offering, and how it aligns with your drinks menu?
The food is modern Mediterranean with a sharing concept, designed to be vibrant, seasonal and approachable. The drinks menu complements this with fresh, balanced flavours, from cocktails to wine, all designed to enhance the social dining experience, rather than overpower it.
How important are your team in ensuring you deliver exceptional service in line with Solaya’s identity?
The team is absolutely central. Service at Solaya is not just about the technical execution; it’s about energy, personality and creating memorable moments.
