The Hound Bar at George


Downstairs, George’s subterranean bar has an Art Deco design, every bit as beautiful as the dining rooms above. Descending the spiral stairs, guests are welcomed by the antique brass bar and rich mahogany bar stools. The menu, like the decor, is a departure from upstairs and will focus on tapas-style dishes served alongside Mediterranean-inspired cocktails, crafted from a unique selection of homemade syrups and infusions. Head Mixologist Santo Borzi, and his team, are embodying a zero-waste ethos, with bespoke garnishes made using emerging technologies that remove their single-use element. Excess citrus and peels will be used to create house liquors, sherbet, and citrus tincture, to give George’s cocktails an intense flavour. Members can enjoy cocktails such as the signature drink, George Martini made with Absolut Elyx, and bar bites such as theHound Dog, George’s take on the classic Hot Dog.
