Tom Walker of the American Bar at The Savoy in London was named ultimate winner at the UK final of the Bacardi Legacy competition.

It followed a year of marketing his cocktail, Maid in Cuba, after he was named one of three “most promising” bartenders at the competition in February last year.

His activities included creating a website at http://maidincuba.com. He will represent the UK at the global final in Moscow in May.

Held in London, the UK final saw Tom go head to head with the other two “most promising” finalists: Nelson Bernardes of Good Godfrey’s at The Waldorf Hilton in London who has since moved to the Long Bar at the Waldorf Astoria At the Bund in Shanghai; and Sam Kershaw, formerly of Babington House in Somerset but now at Callooh Callay in London.

After reaching the final stage at the competition a year ago, the three bartenders have sought to have their cocktails listed and promoted in bars in the UK and overseas, supporting them with their own bespoke marketing campaigns.

The judges were impressed by Maid in Cuba because Tom “brought something modern and forward-thinking to bartending just as the Bacardi cantineros did in Cuba over a hundred years ago”.

A homage to the Mojito, the Daiquiri and other classic Bacardi drinks of the past, Maid in Cuba is a fresh, clean and easy-to-replicate drink, celebrating “all that has been achieved by both bartenders and the Bacardi family over the last 152 years”.

Tom also visited leading bars in 25 cities in 12 countries across five continents to promote his cocktail, carry out special guest shifts and support its listing on menus. Each bar visit was amplified through social media to immortalise the Maid in Cuba serve.

Over the past six years, the Bacardi Legacy cocktail competition has grown to become one of the most rigorous and highly regarded in the world. It celebrates the brand’s cocktail heritage, seeking cocktails that can sit alongside its other “legacy” cocktails including the Cuba Libre, the Mojito and the Daiquiri.

Maid in Cuba by Tom Walker

2oz Bacardi Superior
1oz Lime juice
0.5oz Simple syrup
Small handful of mint
3 slices of cucumber
Absinthe

Add all ingredients to a cocktail shaker, but don’t muddle. Add ice, shake, and double-strain into a large coupette rinsed with absinthe. Top with a splash of soda and garnish with a slice of cucumber.
