Twisted spirit-infused desserts paired with classic cocktails

Baba and Margarita for Sofitel St James

The traditional rum baba is celebrated in a new menu at a London hotel bar where spirit-infused versions of the dessert are paired with classic cocktails.

The team at St James Bar, housed in the Sofitel London St James, have created five options for their new Baba Bar, working closely with chefs in the hotel’s kitchen.

A baba infused with Cointreau orange liqueur is served in a jar, garnished with orange, paired with a classic Long Island Iced Tea, while gin is blended into the mix for another baba paired with a Pimm’s, rich in fresh fruit.

A baba made with tequila is garnished with a slice of lime and served simply with a Margarita (pictured). The Baba Vodka Moscow Mule is finished with a ginger-infused mousse, complementing its pairing with a Moscow Mule.

A more traditional rum-infused baba is paired with a creamy Pina Colada, garnished with pineapple and strawberries. Each of the baba serves is priced at £16.

Bar manager Emilio Moscati said: “This has been a really fun collection to create. Our team of experienced mixologists have worked closely with the executive chef and experimented with different combinations and flavours to deliver the perfect pairing of babas and cocktails.”

The St James Bar, inspired by Coco Chanel’s 1920s Paris apartment, specialises in vintage and signature cocktails as well as exclusive champagnes and wines.
