Jay, who is from bar consultancy LDN Shindiggery and previously worked at Covent Garden Cocktail Club in London, won with a cocktail using a reposado tequila with raspberry-infused Aperol, homemade vanilla agave liqueur and Spanish Bitters, topped with prosecco.
The competition was run to tie in with National Positive Drinking Month, created by AquaRiva’s founder Cleo Rocos. It challenged bartenders to create a “positive” cocktail that used only pure and natural ingredients and no chemicals or preservatives.
They also have to come up with a tale of their wildest night-out, inviting them to share some of their “most fabulous” experiences with alcohol.
The competition highlighted “The Power of Positive Drinking”, named after the book written by Cleo, who champions “hangover-free” alcoholic drinks made with no artificial ingredients.
The final was held at NOLA bar in Shoreditch, London, where the winners of three regional finals in London, Scotland and Leeds faced a team of judges including Cleo, TV journalist Sharon Marshall, BarlifeUK’s Simon Webster and NOLA Bar’s co-owner Dan Priseman.
The Edinburgh winner was Scott Liddle of Strata Queen Street in Edinburgh while the Leeds winner was Fred Kavanagh from Cielo Blanco in Leeds. The final was compered by Stuart Hudson of bar consultancy and events company Forgotten Hospitality.

10ml Raspberry-infused Aperol
10ml Homemade vanilla agave liqueur
3 dashes of Spanish Bitters
Stir the first four ingredients over ice and top up with the prosecco. Garnish with a skewered raspberry wrapped in a kaffir lime leaf.
